This traditional Turkish food is for breakfast. Menemen is very easy to prepare and extremely nutritious. It is simply scrambled eggs cooked in sauteed vegetables and served hot with bread.
Recipe for 4 people:
6 eggs 4 medium and sweet tasty tomatoes, peeled and chopped into small chunks 4 long green peppers cut into small chunks (You can mix these with one hot green chili pepper) 2 finely sliced white onions Half a cup of olive oil Salt and pepper to taste
Preparation
Warm the olive oil in a large pan, then lightly fry the onions and peppers without browning. After about 2 minutes add the chopped tomatoes. Cook the mixture until all the veggies are really nice and soft (around 5 minutes), and the juice has been reduced by about half. In this 5 minutes beat the eggs in a bowl and pour the eggs and stir continually until it begins to firm. Menemen should be firm and juicy, not dry. Season with salt and pepper. Serve hot with fresh bread. Dip it, spread it, or spoon it up.
Is Menemen include onions?
It’s one of the biggest debate topics in Turkish cuisine. A survey occurred in social media with 500k participant and the result was 50% 50%. IMO, both are delicious but I prefer menemen without onion in breakfast. Menemen with onion is better for a lunch or a quick supper.
